What chinese noodles are these?

I was in china town NY one time and went into a authentic chinese resturant even the menu was in chinese.



I ordered some noodles. They were very crispy.



Anyone can tell me what they might have been??

You probably ordered a type of Chow Mein made with egg noodles. They place boiled noodles between two wire strainers attached to bamboo handles. Then, they deep fry them until they get really crispy. Just before serving it, they add on the other ingredients and sometimes the gravy (if you so desire).

They were probably fried egg noodles.
